The honeycombs are placed in the Cretan mountains in close proximity to areas where wild herbs and thyme grow. After approximately one month, the honey that has been produced is collected with extra care and it is poured into jars.

Thyme honey is collected in the summer (July, August, September), while pine honey is collected in autumn (September, October, November). Various types of honey that are produced in Crete are combined and thus, we get a mixture of honey that is made from wild herbs and thyme.
